STEP 1 – MAKE YOUR SAUCE

Place your oysters on a bed of rock salt on a standard baking tray.  The rock salt helps keep them balanced. Add your bacon evenly to the oysters and use a teaspoon to pour your sauce over the bacon. 

STEP 4 – COOK

With your grill turned to high, slide your oven tray in and keep an eye on your oysters.  They only need 2 or 3 mins. Ideally you want your sauce to start bubbling, though if your bacon starts burning first then pull them out.  The sauce will start to bubble faster if you used less Tabasco and may not bubble at all if you used a lot of Tabasco.

STEP 5 – GARNISH AND EAT

Sprinkle with some finely chopped parsley and a drop of lemon juice to really kick the flavour into overdrive.  Allow to cool. Use a teaspoon or oyster fork to run under the oyster and break it free from the shell. The grilling can start to cook oysters onto the shell, so this is normally required.  Use your teaspoon or fork to help slide the oyster, bacon and sauce into your mouth in one mouthful.
